Most likely the coating is applied to all OEM cv-joints/shafts as a sort of preservative during manufacturing until such time the shaft is either put into service on a vehicle or spends an extended period of time as replacement part in inventory. Sort of reminds me of new old stock parts they used to pack in cosmoline. Once exposed to the elements for a while it sort of dries out and flakes away.

This is not wear; this is the coating used to protect the shaft afterward.

Exactly! Always felt like an archeologist peeling away the fine layers of mummified wrap to get down to the treasure.
