Wheel/Tire Upgrade Photos

I'm curious, would you guys recommend an offset compared to the stock wheel? To be fair offset still confused me and apparently the lower or higher the number, the more poke you have? I'd be ideally running a 33 inch pizza cutter of some kind. Don't want bigger than that.
It all depends on the amount of poke you want; I wanted none, and thus went with a Method 703 (7.5" wide wheel, ET50) with a 255/80/17.

As the number gets lower (either to zero, or negative) the wheel moves further outward. A great visual aid to compare this is www.WillTheyFit.com where you can put in the factory wheel/tire specs and the aftermarket option and it will show you where the new setup will sit in relation to everything
 
So I had mine custom made by Braid (made in Spain) to an offset of et40 - so a 40 offset. When I originally put these wheels on I went with 285-70-17 BFG Ko3 tires and I got about a quarter inch of poke. No with 315 and a 2.5” lift I get about an inch from the fender flare. Perfect stance.
I'm curious if your custom made set is what's now listed on this site as standard now?

I'm leaning toward 17x8, ET35 as I want a bit more poke than ET40. Invaluable insight. Gracias.
