You guys must be a bunch of younglings lol. I've had extensive time driving recirculating ball steering vehicles (especially Mercedes). And they've all got this play in the center where you can move the wheel an inch or two in either direction without having the vehicle move. My dad's 1970's S class was this way. My 300CE was this way. And my R129 SL500 is also the same way. I do prefer rack and pinion steering systems like on my Porsche 997.2 Carrera GTS, but for an off-road truck like the Grenny, it should be perfectly fine. Throw that adjustable Fox stabilizer on there and adjust the bump stops, and call it a day. As for the ADAS nannies - I'd turn all that crap OFF.
