If you sleep in your Granny and set the alarm, will the alarm be triggered if you move ?
If yes ,is there a simple solution to stop that happening?

Try it. Stay inside the vehicle, lock it with the key fob, wait 10 minutes for the electrics to go to sleep. ( you'll hear the relays de-energiseing. ) Then move about and see what happens.
Then repeat, but using the internal door locks instead of the key fob.

I would like to alarm the car before sleeping so that it is triggered if someone tries to open the door
And also the possibility to activate the alarm with the kefob if I see/hear something suspicious
Not sure the alarm would be activated if the doors had been manually locked

I often sleep in the rooftop tent with the vehicle locked. Moving while in the tent has not yet ever set the alarm. So I assume you would be ok. (BTW: Grenny, not Granny :))
