What kind of trim tool do you need for the granny? I’m looking to do the under passenger seat install and need to remove some panels to run the wiring. What shape tool works? Are there different ones?

Plenty of car trim removal tool kits on Amazon.
 
Anything Kit that looks something like this. It works for me. Plenty of choices on eBay or Amazon.

How are the panels attached? Besides removing any screws, Do you just need enough leverage and tug hard enough to remove them, or do you need to reach underneath and ‘unlock’ the attachment point?

Look here, it shows what the clips look like. Two different styles but the trim tools work with both:
TRIM (WHITE RETAINER CLIPS): spare white clips used for the panels can be bought here US and here AU and door clips here (US);
